This is a great recipe to use up any bananas that are starting to turn bad in the fruit bowl as they are super sweet, meaning you don’t need to add any sugar.

Serves 4
Prep Time: 10 minutes, plus overnight freezing
Cook Time:

  • 2 ripe bananas
  • 2 cups frozen mango (around 400g)
  • 2/3 cup vanilla coconut yoghurt
  • 1 lime
  • 1 tablespoons flaked coconut, toasted

  1. Peel and slice the banana and place into a container and freeze for 4 hours or overnight.
  2. Place the banana, mango, yoghurt and lime juice into a high speed blender.
  3. Blitz for 2 minutes, or until smooth and creamy, adding  a dash of water if the mixture needs loosening to mix.
  4. Place into serving bowl sand top with lime zest and coconut flakes before serving.
*Store the nice cream in an airtight container int the freezer for 2 weeks.
*You will need to blitz again once re frozen to make it smooth and pliable again.
