Fresh, golden and made for sharing, these little cups bring a burst of sunshine to your festive spread. Joyful, shareable bite that adds just the right touch of sparkle to your holiday table.

Ingredients:

  • 12 wonton wrappers
  • Olive oil spray
  • 2 cos lettuce leaves, finely chopped
  • ½ cucumber, finely diced
  • ½ avocado, diced
  • 12 fresh prawns, peeled
  • 2 spring onions, finely sliced
  • ½ tsp sesame seeds

Cocktail Sauce:

  • 2 tbsp mayo
  • 1 tbsp tomato sauce
  • 1 tsp Worcestershire
  • ½ tsp lemon juice
  • Tabasco (optional)
  • Salt + pepper

Method:

  1. Heat oven to 180°C (fan). Lightly spray a muffin tray.
  2. Press a wonton wrapper into each hole to form a cup. Spray again and bake 8–10 mins until crisp and golden. Cool.
  3. Stir together cocktail sauce ingredients until smooth.
  4. Fill each cup with chopped cos, cucumber and avocado.
  5. Add a peeled prawn on top.
  6. Spoon over cocktail sauce, then finish with spring onion and sesame seeds.
