Mixed Berry Sorbet

Get into the summer mood with a tasty and refreshing sorbet, thanks to Le Creuset.

Preparation time: 10 minutes (plus freezing time)
Serves 6

100g caster sugar
2 tablespoons glucose
½ cup water
500g mixed berries
1/2 lemon

  1. Stir the caster sugar, glucose and water together in a Le Creuset 3-Ply Stainless Steel Saucepan.
  2. Cook over a medium heat until small bubbles appear. This should take about 5 minutes.
  3. Pour the mixture into a Le Creuset Mixing Jug and allow to cool. Add 500g pureed mixed berries and 1/2 a lemon (strain before churning) then churn in an ice cream machine until smooth and frozen.
  4. Divide the mixture between Le Creuset 13cm Classic Square Dishes. Place in the freezer until ready to serve.
  5. Serve in Le Creuset Espresso Mugs.
